Product Introduction

Mustard oil is a vegetable oil extracted from mustard seeds (Brassica juncea or Brassica nigra) with a unique spicy flavor and rich aroma. It is rich in monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA) and erucic acid, and contains rich antioxidant ingredients (such as vitamin E) and bioactive substances (such as glucosinolates). Mustard oil has a wide range of applications in cooking, medicine, cosmetics and agriculture.

Ingredient

Allyl isothiocyanate (AITC):  This is the main component of isothiocyanates, possessing a strong pungent odor and irritant properties. It is also the core substance responsible for mustard oil's antibacterial, anti-inflammatory, and insecticidal effects.

Phenethyl isothiocyanate (PEITC):  This is present in higher concentrations in cold-pressed mustard oil and exhibits antioxidant and potential health-promoting activities.

These components are the source of mustard oil's "spicy taste" and are key to distinguishing it from other vegetable oils.
