Concord Grape Flavor is a food flavoring that reproduces the core flavor of Concord grape (Vitis labrusca 'Concord'), a grape variety native to North America. Its core characteristics are "rich glucose syrup sweetness + fresh slight tartness", combined with jam-like richness and subtle astringency from grape skins. It is a key ingredient for creating "authentic grape pulp flavor", widely used in food fields such as beverages, baking, and sauces, and has higher recognition than ordinary grape flavors.
It falls under the category of natural-dominant food flavors and is mainly prepared in two ways: one is cold pressing or enzymatic hydrolysis of the pulp and skins of fresh Concord grapes to extract its signature component, methyl anthranilate (which imparts the unique "grape aroma"), as well as fructose and organic acids; the other is blending of natural spices (e.g., grape seed oil, citric acid) to replicate its complex flavor of "pulp sweetness + skin tartness".
