Pistachio flavoring reproduces the unique flavor of pistachios—including nutty aroma, creamy undertones, and roasted caramelized notes—through chemical synthesis or natural extraction techniques. Based on the source of raw materials, it can be categorized into the following types:
Natural Flavoring: Obtained by extracting essential oils from pistachios or through processes like enzymolysis and Maillard reaction. It has a natural aroma but comes with higher cost and lower stability.
Synthetic Flavoring: Formulated from chemically synthesized fragrances (e.g., aldehydes, esters, and pyrazines). It features low cost and high stability, making it widely used in industrial food production.
