It is a phenolic aldehyde, an organic compound with a benzene ring.
Sources:
Natural Source: Extracted from the seed pods (beans) of the vanilla orchid, primarily Vanilla planifolia. The process is lengthy and labor-intensive, making natural vanillin expensive.
Synthetic Production: The vast majority (over 99%) of vanillin used commercially is produced synthetically. Common starting materials include:
Lignin: A byproduct of the wood pulp industry (paper manufacturing).
Guaiacol: Derived from petrochemicals or other sources.
Fermentation: Using microorganisms and feedstocks like rice bran or ferulic acid (from plants like corn or rice). This can be marketed as "natural" in some regions.
Application
Food Industry: The dominant application. Used in baked goods, ice cream, chocolates, candies, beverages, and dairy products.
Fragrance Industry: A key component in perfumes, candles, and air fresheners for its warm, sweet scent.
