Cinnamon flavor is a food flavor additive prepared from cinnamon bark (such as Ceylon cinnamon, Chinese cinnamon) through processes like steam distillation, supercritical CO₂ extraction or synthetic technology. Its core component is cinnamaldehyde (usually with a content of ≥80%), and it contains synergistic aroma substances such as cinnamyl acetate and eugenol, presenting a typical flavor of warm spiciness with a slight woody tone and sweet-hot sensation. Natural cinnamon flavor is mostly extracted by distillation after crushing fresh bark, while the synthetic type is made by chemically synthesizing cinnamaldehyde and compounding it with other spices. The product forms include oil-soluble liquids (suitable for oily systems), water-soluble solutions (suitable for beverages) and microencapsulated powders (high-temperature resistant for baking), which have the characteristics of strong volatility and strong aroma penetrating power, and need to be stored in a dark and sealed manner to prevent oxidation and deterioration.
