Taro emulsified flavor uses emulsification technology to disperse the oil-soluble flavor of taro flavor in water to form an oil-in-water (O/W) emulsion flavor. Fragrance ingredients: including compounds with characteristic taro aroma such as taro aldehyde and taro alcohol, and auxiliary flavors such as vanillin and diacetyl may also be added to enhance and enrich the aroma, making the overall aroma more realistic and natural.
Emulsifiers: Commonly used ones include monostearate glyceryl, sucrose fatty acid esters, etc., which can reduce the surface tension of the oil-water interface, make the oil phase evenly dispersed in the water phase, and form a stable emulsion.
Thickeners: such as starch, pectin, sodium carboxymethyl cellulose, etc., can increase the viscosity of the water phase, prevent emulsion stratification, and improve the stability of the flavor.
Solvents and diluents: Water is generally used as the main solvent, and sometimes a proper amount of propylene glycol is added to dissolve spices and other ingredients and adjust the concentration of flavors.
