Fragrance: With methyl anthranilate as the main fragrance, it can simulate the typical aroma of grapes. Leaf alcohol, trans-2-hexenol, oxidized linalool and other raw materials with green smell are also added to enhance the freshness and naturalness of grapes.
Oils: Commonly used vegetable oils such as soybean oil, corn oil, etc., or some oils with specific flavors provide oil phase for flavors, which helps to retain and release the aroma, while increasing the mellow taste.
Emulsifiers: Such as monostearate glyceryl, sucrose fatty acid esters, etc., can reduce the surface tension between the oil phase and the water phase, so that the oil droplets are evenly dispersed in the water phase to form a stable emulsified system.
Thickeners: such as starch, pectin, sodium carboxymethyl cellulose, etc., can increase the viscosity of the water phase, prevent oil droplets from agglomerating and stratifying, and improve the stability of emulsified flavors.
Others: Solvents such as propylene glycol may be added to help dissolve flavors; antioxidants may also be added to prevent oil oxidation and deterioration, as well as appropriate amounts of pigments to make the flavor color closer to real grapes or meet product requirements.
